As you can tell, the two main ingredients in this recipe are nuts. I used pecans and walnuts.
Feel free to use your favorite type of nuts, but be aware that some types have more carbs than others. Cashews have the most carbs – 22g carbs in one serving.
Compare that to 9g of carbs in almonds and 7g of carbs in walnuts. Pecans have the least amount of carbs, with only 4g net carbs per serving.
I used the nuts with the least amount of carbs. If you want to change things up, be aware that you’ll have to recalculate how many net carbs are in each serving.
Roasted Nuts Recipe
Finally, you don’t have to waste time in the grocery store trying to find some roasted nuts that are made without sugar. This easy recipe is made with fresh and dried herbs and slightly sweetened with Swerve brown sugar substitute.
There are just 2 grams net carbs in each serving, so you don’t have to worry about them kicking you out of ketosis.
This is an all-purpose recipe. Add a handful of the roasted nuts to your lunch.

Herb Roasted Nuts
I used fresh herbs in this recipe because they are more aromatic than dried ones. If you only have dried herbs, go ahead and use them.
They will still add flavor to the roasted nuts. I would add 1/2 a tablespoon more of dried herbs than fresh ones.
These nuts have a slightly-sweet and earthy flavor. If you want them to have some heat, there are two ways you can do that.
Either mix in some red pepper flakes or add cayenne pepper to the spice mixture.

How Long Do Roasted Nuts Last
If you store them correctly, the roasted nuts will last about a month. Store them in an airtight container and keep them in a cool, dark place.
The pantry is the best place for them.
I don’t recommend freezing the nuts. They won’t last that much longer and freezing them alters their flavor.

Directions
Preheat the oven to 300 degrees. Combine the rosemary, thyme, brown sugar substitute, cumin and salt and pepper to taste in a small bowl.
Add the pecans and walnuts to a mixing bowl, and drizzle with the olive oil.
Sprinkle in the herbs and seasoning. Toss to coat well. Layer the nuts onto a parchment lined baking sheet.
Bake for 15 minutes.
