There are two parts to these delicious cookies – the cookie cups and the pecan filling. You can eat the cookies without the filling, but they aren’t sweet.
If you want to eat the cookies without the sugary pecan filling, I suggest either adding a keto frosting on top or sweetening them with some liquid sweetener.
The pecan filling is perfectly sticky-sweet. In order to get the perfect texture, I suggest using both Swerve brown sugar substitute and sugar-free honey.
Together, they will give the filling a caramel flavor and sticky texture that reminds you of authentic southern pecan pie.

How To Store Cookies
Since the pecan cookie cups have a soft filling, I suggest keeping them in the refrigerator. Store them in an airtight container and keep them in the refrigerator for up to a week.
If you refrigerate them, the filling will harden a bit. Just warm them up in the microwave and they will soften back up. They taste the best when they are hot out of the oven!

Keto Pecan Cookie Cups

Ingredients
Cookie Cups
- 1 cup Almond Flour
- 2 ounces Cream Cheese softened
- 6 tbsp Butter softened
Pecan Pie Filling
- 1 large Egg
- 2 tbsp Melted Butter
- 1/3 cup Swerve Brown Sugar Substitute
- 1/2 tsp Vanilla Extract
- 1/4 cup Sugar-Free Honey
- 1/3 cup Chopped Pecans
Instructions

Preheat the oven to 350 degrees, and grease the sections of a mini muffin tray well.

Add the almond flour, butter and cream cheese to a mixing bowl, and blend until smooth.

Press the dough into the sections of a mini muffin tray, to form cookie cups.

Sprinkle some of the chopped pecans into each cookie cup.

Add the melted butter, brown sugar substitute and sugar free honey into a pot on the stove over medium low heat. Stir until the mixture is smooth and sugar has melted.

Remove from the heat and let cool for a few minutes.

Whisk in the egg and vanilla until well combined.

Spoon the filling mixture into the cookie cups, filling them about ⅔ of the way full.

Bake for 10-15 minutes, or until the cookie cups are browned and cooked through.

Let the cookie cups cool to room temperature before serving.
