Loaded Quesadillas
If you love cheesy quesadillas and Philly cheesesteaks, then this recipe is perfect! It’s the best of both worlds! Crispy keto tortillas are perfectly fried, stuffed with crispy peppers, ground beef, and gooey melted cheese.

The result will leave you wanting to make them every day for lunch! And there are so many ways you can customize them too. Serve them with a sour cream dip, a side of guacamole, or drizzle some hot sauce on top.
No matter how you make them, you’re going to love them!
Keto Quesadillas
Since I used large keto tortillas, each serving is half of a quesadilla. You can also adjust this by using smaller, street-taco sized tortillas instead.

There are 6 grams net carbs in each half of quesadilla. That’s quite a bit of carbs per serving, but there are a few ways to cut that down.
If you want to cut the carb count down, add the filling to lettuce boats or make some cheese wraps. You can also cut back on how many peppers and onions you add to the ground beef.
Mushrooms and peppers are so good for you that I suggest keeping them.
Philly Cheesesteak Quesadillas
I made the quesadillas in a skillet on my stove. If you’re really busy and don’t want to baby the stove, make them in the air fryer.

Line the air fryer basket with some foil and place the quesadillas on them. Then, cook them at 375F for 5-8 minutes per side.
Add these loaded quesadillas to your weekly meal prep. They taste best when you reheat them in the air fryer, but the microwave will work too.
Store the quesadillas in an airtight container in the refrigerator for up to three days.
What To Eat With Quesadillas
These are some seriously filling quesadillas. You won’t have to eat much with them to feel full! If you will eat these for dinner, serve them with scalloped turnips. For lunch, I suggest making a keto cobb salad on the side.

Do you want something lighter on the side? How about a bowl of keto turmeric zucchini soup? Then munch on some keto oopsie bread on the side with it and you’ll feel so satisfied!
Best Keto Tortillas
There are a bunch of different kinds of keto tortillas out there. Read the ingredients labels first and pick out the ones with ingredients you like. I prefer the taste and texture of Mission keto tortillas. They come in different sizes, so go for the larger ones.

Mama Lupe also makes some low-carb tortillas and I’ve heard fantastic things about Wonder Wraps keto tortillas too. You can’t go wrong with high-fiber and low-carb wraps.
Keto Loaded Philly Cheesesteak Quesadillas Recipe

Ingredients

- Large Keto Tortillas
- Frozen Cheesesteak Meat
- Red and Green Bell Peppers
- Onion
- Worcestershire Sauce
- Mushrooms
- Minced Garlic
- Shredded Provolone Cheese
Directions

Saute the cheesesteak meat in a skillet over medium high heat until cooked through.
Remove and set aside.
Leave 2 Tbsp of the drippings in the skillet, and discard the rest.

Reduce the heat to medium, and add the onions and peppers to the skillet. Saute until they are just beginning to soften.

Stir in the mushrooms, and continue to saute until all of the vegetables are softened.

Mix in the garlic, worcestershire sauce, the cooked meat and salt and pepper to taste.

Lay a tortilla in the bottom of a new skillet over medium heat. Add ⅓ of the cheesesteak mixture to the tortilla.

Sprinkle with ⅓ of the cheese.

Top with another tortilla.
Saute until the tortilla on the bottom is browned and crispy. Carefully flip the quesadilla over and continue to cook until the other side is browned and crispy too.

Repeat steps 6-10 to create two more quesadillas.
Slice the quesadillas in half to serve.
