And since tuna a cucumbers are some of the best things to eat on keto, I whipped up a salad that has all of my favorite Mexican-inspired ingredients. You’re going to love how it all tastes and comes together.
I included a few secret ingredients that might surprise you, but they really work.
To make the salad dressing, I combined whipped cottage cheese with taco seasoning and a bit of chicken bouillon powder. Yup, I used cottage cheese with chicken bouillon!
If you don’t want to buy whipped cottage cheese, you can make your own. Puree cottage cheese and then use an electric or stand mixer to keep whipping it until the texture becomes lighter. Easy!
Tuna Cucumber Salad
I love finding new ways to cook and eat tuna. It’s one of the healthiest ways to eat more fish and protein.

It’s full of healthy fats and it’s super affordable. You’ll save money when you buy canned tuna because it lasts so long on the shelf that you prevent food waste.
And there are so many ways to cook and eat it! If you like crispy roll-ups, make some keto tuna melts. And you can never go wrong with keto tuna noodle casserole.
Do you like crispy fried food? Then make keto air fryer tuna bites.
But if you don’t like tuna, then just swap it out with canned chicken! It will still taste just as good with chicken in place of tuna.
Keto Mexican Salad
This is a really filling but light salad. The entire recipe makes four servings and each serving has only 5 grams net carbs.

Most of those carbs come from the veggies and cottage cheese. And that’s also where the nutrition and flavor comes from, so they are carbs that you need.
I prefer to eat this with a fork, right after I mix it all together. But you could also be served on tortillas or spoon it on top of an avocado.
Eating it with an avocado will give you more healthy fats and keep you feeling full longer, too!
What makes it taste like a Mexican salad? I added a jalapeno for some spice and taco seasoning to the salad dressing.
Then, I topped the salad with some diced Roma tomato. Trust me – use fresh tomato, not canned.
Keto Tuna Cucumber Salad
You have a lot of room to change this recipe, but I have a few suggestions. First, make sure you drain the tuna really well.

You might even want to rinse it off and pat it dry. If you leave too much water and oil in the bowl, it will adjust the consistency of the salad dressing (and it might not be in a good way).
It’s also a good idea to use an English cucumber. It’s seedless and usually has a slightly sweet flavor.
You could also use small baby cucumbers. If you don’t like how strong the red onions taste, either use white onions or leave them out and if the jalapenos make it too spicy for you, leave them out.
If you want it to be even spicer, add some poblano peppers.
How To Store Tuna Salad
Since this entire recipe makes four servings, you will probably have some leftover. Store your extra tuna salad in an airtight container.

Keep it in the refrigerator and eat it within three days.
Do not freeze tuna cucumber salad. It will change the texture so much that when it thaws, it won’t be enjoyable at all.
