This recipe is perfect for those days when you are staring at your phone, wondering what to make for dinner. It will break you out of the ordinary “meat and vegetables” rut with its salty and savory sauce covering every inch of the juicy chicken breast.

Keto Peanut Butter Chicken
I used creamy peanut butter and then garnished it with even more chopped peanuts. I love the texture of the soft sauce with the crunchy peanuts.
The peanuts garnish is completely optional. I think it really adds a fun texture to the sauce, but the chicken tastes perfect without them. You can even use creamy peanut butter if you don’t want any chopped peanuts in it at all.
Remember that whenever you use peanut butter in a low-carb recipe to only use sugar-free peanut butter. I like to use natural peanut butter because it is normally unsweetened and uses natural oils.
Keto Chicken Peanut Sauce
Save this recipe because you can freeze the peanut sauce and use it later. The easiest way to freeze peanut sauce is to pour it into an ice cube tray. Then, you can grab as many peanut sauce ice cubes as you want and use them at a later date.
These frozen sauce cubes will stay fresh in the freezer for up to 6 months.
The fresher the ingredients, the better it will taste. So if you can, used minced garlic instead of garlic powder and squeeze fresh lime and use ginger paste instead of ginger powder. I used just a pinch of red pepper flakes, but

You can also easily turn this into a low-carb chicken pad Thai recipe. Just add a can of drained palmini noodles and toss it in the shredded chicken and peanut sauce. If you want it to be a little spicier, add more red pepper flakes and a splash of sriracha.
The peanut chicken dinner saves really well. As it chills in the refrigerator, the flavors soak into the chicken and really make it taste even more robust! Store it in an airtight food storage container. It will stay fresh for up to 3 days.
Keto Peanut Butter Chicken Lettuce Wraps
Another fun way to eat this peanut butter chicken is in lettuce wraps. Use either iceberg lettuce or butter lettuce. Then, just pile the shredded chicken and sauce on the lettuce and wrap it up!
Sometimes it is just easier to add some chopped lettuce to a bowl and add this shredded chicken and sauce on top and eat it like a salad. Either way is perfect!

Yes, peanuts are definitely keto-friendly. Some keto dieters prefer to avoid peanuts because they do have quite a few carbs and could cause inflammation. They are also a fantastic source of healthy fats and protein, so I think it all comes down to a personal choice or dietary preference.
What To Serve With Peanut Chicken
There are two main types of side dishes that people usually serve with peanut chicken – rice or noodles. If you want to serve rice, I suggest making cauliflower fried rice. It is low in carbs and seriously amazing flavor.
Bang bang cauliflower also has a show-stopping flavor that will get your attention. If you prefer noodles, then just add a can of palmini noodles to the chicken and sauce.
Another one of my favorite Asian-inspired side dishes is bok choy stir fry. It has the same umami tastes but with the fiber-rich bok choy.

Ingredients:
Chicken breasts
Olive oil
Red bell pepper
Natural peanut butter
Lime juice
Garlic
Soy sauce
Swerve brown sugar substitute
Ginger paste
Chicken broth
Red pepper flakes
Chopped peanuts
Chopped green onions
Instructions:
1. Heat the olive oil in a skillet over medium high heat on the stove.
2. Add the chicken to the skillet and saute until browned and almost completely cooked through.
3. Mix the red pepper slices into the skillet and saute until the chicken is done and the peppers are softened.
4. While the chicken and peppers are cooking, whisk together the peanut butter, lime juice, minced garlic, soy sauce, brown sugar substitute, ginger paste, chicken broth and red pepper flakes in a bowl.
5. Reduce the heat to medium and pour the sauce over the chicken and peppers. Stir to combine well. Saute for another few minutes.
6. Serve garnished with chopped peanuts and green onions.
