When you need to make a big dessert in a short amount of time, make this recipe. These dessert cookie bars taste just like classic snickerdoodle cookies.
When you cut them into 12 bars, there are only 2 grams net carbs in each bar! One of the best things about these cookie bars is the cinnamon sugar dusting on top.
That’s what makes them taste like classic snickerdoodle cookies! These little cookie bars are perfect for bake sales, dinner parties, or to add a bit of sweetness to your lunch.

I kept both the ingredients and the recipe really simple. I don’t have time for complicated recipes!

For this one, you just have to mix all the ingredients together, pour the batter into the baking dish, and bake the bars! Then, top them with the cinnamon sugar mixture. It really is that simple!
Since this is a low-carb recipe and uses almond flour instead of all-purpose flour, it’s also a gluten-free recipe, too. This is the perfect dessert to make when you don’t know if anyone has any food allergies or sensitivities.

The best way to store the cookie bars is to slice them first and then keep them in an airtight container. Store them at room temperature and eat them within 3-5 days.

You can freeze them, too. Keep them in a freezer-safe container and eat them within 6 months.
For the best results, wrap each bar in plastic wrap.

Directions

Add the almond flour, baking powder, Swerve confectioners sugar substitute, eggs, vanilla, butter and xanthan gum to a mixing bowl, and blend until smooth.

Spread the mixture into a 9×9 well greased baking dish.

Stir together the Swerve granulated sugar substitute and cinnamon in a bowl.

Sprinkle the cinnamon sugar mixture over the batter in the baking dish.

Bake for 25-30 minutes, or until cooked through.
