Cucumbers are some of the most keto-friendly veggies that you can eat. There are only 1-2 grams of net carbs in a cup of chopped cucumber.
That’s why I use cucumbers in so many of my salad recipes! I’ve used it with chicken before when I made Keto Sliced Cucumber Chicken Salad.
This time, I took that idea and made it taste like jalapeno poppers. I love how it turned out!
Keto Chicken Cucumber Salad
Even though this is one of the easiest recipes that you’ll make, I have a few tips that will make it even easier. First tip is one of the most important ones.
Make sure you chop up the ingredients into tiny pieces. This includes both the cucumbers and the bacon.
The smaller pieces are easier to mix with the chicken and a lot easier to eat.
Next, let the cream cheese soften before you mix it with the Greek yogurt. Cold cream cheese is really difficult to mix but you can make it a lot easier to mix if you use an electric mixer or a stand mixer.
Final tip: used canned chicken. It’s tender, tasty, and will save you a lot of money.
What To Eat With Salad
This is the perfect salad to prep for the week ahead. It stands out as as a tasty salad for lunch.
You can eat it with a fork. Or use some homemade keto flatbread or keto cloud bread and eat it like a dip or sandwich.
Or serve this on the side with your dinner. It will taste delicious with a serving of Low Carb Air Fryer Chicken Sausage and Peppers – especially with the peppers. Or make some low-carb sweet chili chicken for dinner with the light salad.

How To Store Chicken Salad
Since there isn’t any lettuce in it, this salad is easy to make ahead in your meal prep. Store your jalapeno popper chicken cucumber salad in an airtight food storage container.
Keep it in the refrigerator and eat it within three days.
The dressing might separate a bit as it sits in the fridge. This is totally normal.
Just give it a good stir and it will taste as good as new!
