Have you ever made pancakes with cottage cheese? It’s surprising how delicious they turn out!

The first time I made them was when I created my Keto Cottage Cheese Pumpkin Pancakes recipe. This is still one of my favorite fall pancake recipes of all time.
This time, I made a high-protein version that will help you build lean muscle and help you feel full until the next meal.
There is a surprising ingredient in them that you might not expect. Yes, I added breakfast sausage to them!
The result is like a McGriddle, but in pancake form. Honestly, the savory sausage adds the perfect flavors to balance the sweetness of the pancakes and bonus – you can control how sweet or savory they taste.
Low-Carb Pancakes
These are low-carb pancakes, but I struggle to call them keto-friendly. This is because there are 8 grams net carbs in each one.

That’s a bit much for some strict keto dieters, and I respect it. But you could eat them and stay within your macros.
You just might have to do a little advance planning, first.
They are also perfect for people who aren’t on a keto diet. They are naturally gluten-free and high-protein.
If you remove the breakfast sausage, they could be vegetarian-friendly (but not vegan).
Healthy Pancakes
Cottage cheese pancakes with sausage are so good for you because they are made from scratch. The only ingredients that I used that might have a few “added ingredients” include the ground sausage and Swerve confectioner’s sugar substitute.

They are still really good for you. These pancakes are full of healthy fats, protein, calcium, and fiber.
It’s good for your energy, gut-health, and weight loss. If you’re trying to lose weight, add these pancakes to your breakfast or even your lunch menu.
They taste so good that you won’t need any syrup. One quick note: please remember to use almond flour, not almond meal.
If you use almond meal, the pancakes will turn out grainy.
Keto Breakfast Ideas
Since these pancakes are a bit higher net carbs, I don’t recommend making much on the side when you eat them. So if you’re looking for more low-carb or keto-friendly breakfast ideas, I have a bunch for you.

Make Pancakes Ahead
Speaking of meal planning, these pancakes are a fantastic thing to make at the start of the week and reheat. Store the cooked pancakes in an airtight container or food storage bag. 
Then, keep them in the refrigerator. Reheat or eat them within three days.
You can freeze them, too. Wrap each pancake individually in parchment paper. Then place them in a freezer-safe food storage bag.
They will stay fresh in the freezer for up to six months.
Low-Carb Healthy Cottage Cheese Pancakes Recipe

Net Carbs:8 net carbs per serving

Ingredients:
- Natural ground breakfast sausage
- Almond flour
- Whipped cottage cheese
- Large eggs
- Vanilla
- Swerve confectioners sugar substitute
- Baking powder
- Pinch of salt
Instructions:

Saute the ground sausage in a skillet over medium high heat on the stove until completely browned and cooked through.

Whisk together the remaining ingredients in a mixing bowl until well combined. Heat a skillet over medium heat on the stove.

Pour in the pancake mixture a ¼ cup at a time into a circle shape. Sprinkle some of the cooked sausage on top of the batter in the skillet.
Saute the pancakes on one side until small bubbles start to form on the top, and then flip to cook on the other side for another 2-3 minutes.

Repeat this process until all of the pancakes have been made.
