When you want something quick that’s also a kick to your tastebuds, make these zesty Southwest chicken roll-ups. They’re ready in less than 20 minutes and as spicy or mild as you want to make them.

They’re the perfect substitute for tacos on Tuesdays and you can enjoy them for a quick lunch.
Since roll ups are finger foods, you can serve them at parties, too. All you need is some keto-friendly chips, homemade guacamole, some keto salsa, and even some low-carb nachos.
Low-Carb Chicken Roll-Ups
Save yourself time and make these ahead of time by adding them to your weekly meal prep. Make a batch of them and store them in an airtight food storage container.

Keep them in the refrigerator and eat them within three days. Then, reheat them in a skillet or an air fryer. Don’t use the microwave because it will make the tortillas way too soft. And the crispy tortillas are what I love about these southwest chicken roll-ups.
Chicken Tortilla Roll-Ups
There are a lot of different ways to change this recipe and make it your own. I made it with shredded chicken.

You can use canned chicken, canned tuna, or use leftover rotisserie chicken. And if you have leftover taco meat from other Mexican meals, use that instead. It’s so versatile!
The really surprising thing is that there are only 2 grams net carbs in each roll-up. That’s why I enjoy eating them for lunch.
They’re super filling and help me reserve a lot of my macros for a much larger dinner.
Cheap Keto Lunch Idea
Another fantastic thing I love about these roll-ups is that they are incredibly budget-friendly. The most expensive part of this recipe is the shredded chicken.

And if you like to cook Mexican or other southwest recipes, you probably have almost all of the other ingredients on-hand already.
The Black Soy Beans are optional, but they add a lot of protein and texture to the roll-ups. And if you want them to be spicier, add some habanero peppers.
You can also use ricotta cheese instead of cream cheese. And instead of that combination of spices, feel free to use a keto-friendly taco spice blend.
What To Eat With Roll-Ups
These Southwest chicken roll-ups are the perfect lunch or easy dinner. Serve them with some Keto guacamole deviled eggs or go for another finger food and make some crunchy Keto fried pickles with cheese.

Ingredients:
- Zero carb street taco sized tortillas
- Shredded chicken
- Shredded cheddar cheese
- Cream cheese softened
- Yellow bell pepper chopped
- Green onions chopped
- Black Soy Beans rinsed and drained
- Jalapeno peppers finely chopped
- Chili powder
- Cumin
- Paprika
- Garlic powder
- Salt and pepper to taste
Instructions:
Add some oil to a skillet, and toss in the yellow bell pepper and jalapenos. Saute for 2 minutes.

Mix in the chicken and beans. Saute for another 3 minutes.

Toss the mixture into a mixing bowl with the green onions, cream cheese, chili powder, paprika, cumin, garlic powder and salt and pepper to taste. Stir together well.

Sprinkle in the cheese, and stir to combine.

Place a line of filling down the center of each tortilla, and roll closed over the filling.

Spray a skillet with cooking spray, and toast the tortillas until browned and crispy.

- 4 ounces Cream Cheese softened
- 1/2 Yellow Bell Pepper chopped
