Cauliflower Nachos
I’m constantly looking for creative ways to cook cauliflower. It’s one of the vegetables with the fewest carbs and is full of fiber and minerals.
Since it’s so good for you, it makes sense to try eating it but fresh, raw cauliflower tastes bland. That’s why I like to smother it in cheese or make cauliflower rice.
Roasting cauliflower brings out the sweetness that’s hiding in it. In fact, after making Keto Loaded Ranch Roasted Cauliflower, I knew I wanted to use them as the base of a plate of nachos!
Turns out, it’s the perfect replacement for chips. Roasted cauliflower is super nutritious and has a fantastic crunch if you roast it long enough.
Best part about these nachos is that you can pile your favorite toppings onto the cauliflower. Make it as cheesy, spicy, or mild as you like it!
Keto Nachos
The idea behind nachos is simple. You start with a base lower and then keep adding your favorite Tex-Mex toppings!
Add your favorite meat, cheese, and spices and you have the makings of a seriously good meal. Even if you don’t like cauliflower, you’ll like them when they’re smothered in cheese and spicy ground beef!
You could also use bell peppers instead of cauliflower. I love my Low Carb Bell Pepper Nachos recipe too.
I used chorizo instead of ground beef in the bell pepper nachos recipe, and it really brought out the sweetness in the mini bell peppers.
Best Cheese For Nachos
The type of cheese is one of the easiest things to change on nachos. For my nachos, I used the Fiesta blend cheese but if you want something that will melt really well, I suggest using American cheese.
Give it some heat and add some pepper jack cheese. I didn’t add any, but you could also shred some sharp cheddar cheese at home.
If you have time, shred cheese at home. Not only will it taste better, but it won’t have anti-caking ingredients mixed into it.
What To Eat With Nachos
Since each serving has 7 grams of net carbs, I think these nachos are an entire meal. But if you cut the serving size in half, you can eat them with any of your favorite keto-friendly Mexican foods.
Serve the nachos with a Keto Crunchy Dorito Beef Burrito. It’s really filling and has a lot of similar ingredients.
Add a cold bowl of keto aguachile to the table. It’s a refreshing salad. And don’t forget to make keto chili lime tortilla chips with radish salsa or homemade guacamole.
Nachos Meal Prep
If you want to eat nachos later in the week, I suggest storing all the ingredients in separate containers. Then, when you’re ready to eat them, just reheat the cauliflower and ground beef.
Don’t store the nachos pre-made because the avocado will turn brown and the red onion will overpower the other ingredients. Pre-roasting the cauliflower and browning the ground beef will save you a lot of time.
If you don’t like olives, leave them out. The nachos will taste delicious without them.

Ingredients
- Cauliflower
- Olive Oil
- Chili Powder
- Cumin
- Paprika
- Oregano
- Ground Beef
- Minced Garlic
- Avocado
- Black Olives
- Red Onion
- Roma Tomato
- Fiesta Blend Cheese
Direction
Heat the oven to 425 degrees. Layer the cauliflower slices onto a parchment lined baking sheet. Drizzle the cauliflower with olive oil.
Combine the chili powder, cumin, paprika, oregano and salt and pepper to taste in a bowl. Sprinkle ⅓ of the seasoning over the cauliflower pisces, and toss to coat well.
Roast the cauliflower until browned and crispy.
Add the ground beef to a skillet over medium high heat, and saute until browned and cooked through.
Drain any excess fat, and sprinkle in the remaining seasoning. Stir to combine.
Place the cauliflower onto a plate or platter.
Top the cauliflower with the meat, tomatoes, onions, black olives and fiesta cheese.
