Are Dried Cranberries Keto
Dried cranberries are ok on the keto diet in moderation. In fact, 1/4 a cup of dried cranberries has a shocking 31 grams net carbs! WOAH.

That’s why I only put a few of them in each roll-up. They can add color and flavor (and are super good for you), but they are also really high in sugar, too.
Even with the dried cranberries in the roll-ups, there are only 3 grams net carbs in each roll-up. If you’re concerned about the sugar or your want to eat more than one roll-up, it’s ok to leave the cranberries out. The roll-ups will taste delicious without them.
Cranberry Pecan Chicken
These roll-ups are both sweet and savory with salty, earthy pecans and rich cream cheese mixed in. If you love eating roll-ups, then you will really enjoy these!

They are one of my favorite lunch ideas because they are so high in protein and healthy fats (which keeps me feeling full) and satisfy my sweet tooth at the same time.
The pecans are an essential part of the recipe. They compliment the savory flavor of the mild chicken. In order to help them mix into the shredded chicken and cream cheese, I suggest chopping them up into really tiny pieces.
Use a food processor or cut them manually with a knife.
Chicken Roll-Ups
This is a fantastic way to use leftover chicken! In fact, I like to make a big dinner with chicken breast at the start of the week and then save the leftover chicken for meals like this one.

If you don’t have any leftover cooked chicken, then save yourself time and either use a rotisserie chicken or some canned chicken.
I’ve made cheese roll-ups with different types of cheese before. But I think that the mozzarella cheese has the best flavor to match with the sweet cranberries and buttery pecans. For even better flavor, shred the mozzarella cheese at home.
Bagged shredded cheese from the store has a muted flavor because it’s covered in anti-caking ingredients that keep it from becoming a big lump in the bag.
Low-Carb Cranberry Chicken

These roll-ups taste the best when they are hot and fresh out of the oven. The longer they sit in the refrigerator, the softer the cheese wraps will become.

Ingredients
- Shredded Chicken
- Olive Oil
- Onion
- Minced Garlic
- Cream Cheese
- Fresh Spinach
- Chopped Pecans
- Chopped Unsweetened Dried Cranberries
- Shredded Mozzarella Cheese
Directions

Preheat the oven to 400 degrees. Place the olive oil and onions in a skillet over medium heat. Saute until the onions soften. Stir in the chicken, garlic, and saute another 30 seconds.
Mix in the spinach, and saute until wilted. Add in the cream cheese, and cook until melted. Place the cranberries and pecans in the skillet, and stir to combine.Season with salt and pepper to taste.

Arrange the mozzarella cheese into 8 evenly sized flattened circles on a parchment lined baking sheet.
Bake for 8-10 minutes, or until the edges of the cheese circles are turning brown and crispy.

Remove, and let cool for one minute. Place a layer of the filling down the center of each cheese circle.

Let the cheese cool 1-2 more minutes, and then carefully fold the cheese circles up and over the filling. Be careful, the cheese will still be hot.
Let the rollups cool and crisp up before serving.
