This easy keto beef soup is made with strips of cabbage instead of noodles. It’s a fun twist on a classic beef soup, with 6 grams net carbs in each bowl.

Beef and Cabbage Noodle Soup
Grab this recipe if you need a soup that will be ready to eat in just 30 minutes. It’s full of good-for-you veggies, easy ground beef, and fresh herbs.

The most time-consuming part of this recipe is cutting up the cabbage. And while cabbage is really good for you (and super low in carbs), if you’re running short on time, you can replace the cabbage with some canned palmini noodles or just chop it up roughly instead of cutting it into strips.

Keto Beef Soup
Since I used beef broth, I wanted to use beef as the main source of protein. Ground beef is the easiest and quickest kind of beef to use.

If you wanted, you can make it with thin slices of roast beef, or diced steak instead.
Celery is really good for you, but it’s also optional. After it cooks in the soup, it doesn’t taste very much like celery.
It soaks up all the other flavors. And even though I used canned tomatoes, you can chop up a fresh tomato and use that instead.
Easy Cabbage Noodles
There are so many different ways to use cabbage! I loved using it in a ham and cabbage salad and my family still asks me to make cheesy keto cabbage au gratin.

Cutting it into strips and cooking them like noodles is another fun way to eat this healthy veggie. It’s actually pretty easy to slice it up this way.
I just cut the cabbage in half and then slice the cabbage like I would a loaf of bread. It naturally falls into long, noodle-like strips.
If you know you’ll be short on time this week, pre-cut the cabbage and keep it in the refrigerator for up to three days.
What To Eat With Soup
This beefy soup tastes delicious with some Keto Spicy Green Beans with Caramelized Pecans. You might have to be careful with the serving sizes though – both dishes are higher in carbs but the spicy green beans taste amazing with the soup.

For something sweeter, I suggest making a strawberry cucumber salad instead. On the side, serve some keto garlic knots.
They always go well with almost any recipe you make. For some veggies, add some garlic butter zucchini and squash.
They will perfectly complement all the savory herbs and flavors in this soup.
Soup Meal Prep
This is the perfect type of soup to use in your meal prep, too! Store leftover beef soup in an airtight container (like a mason jar with a lid) and keep it in the refrigerator for up to three days.

Then, reheat it on the stove or in the microwave. This is a microwave-friendly recipe that doesn’t change texture when you reheat it.

Ingredients
- Ground Beef
- Celery
- Red and Green Bell Peppers
- Minced Garlic
- Diced Tomatoes Can
- Cabbage
- Beef Broth
- Thyme
Directions

Add the ground beef, onions, bell peppers and celery to a pot over medium high heat. Saute until the beef is browned and the vegetables have softened.
Drain the excess grease.

Reduce the heat to medium, and stir in the thyme and garlic. Saute for 30 seconds. Pour in the broth and diced tomatoes. Stir to combine.

Bring the mixture to a boil, add in the cabbage, cover and reduce heat to medium low to simmer until the cabbage is tender.

Season with salt and pepper to taste before serving.
