Keto Cornbread
Cornbread is a southern side dish that so many people love with their whole heart – including my family. When I went on the keto diet, I felt like I was missing out when they ate the cornbread without me!
So, I set out to create my own low-carb versions and it tastes just the same! There are a lot of different ways to make stuffing or dressing.
Some people use stale bread, others use bagels, and tons of people adore the bagged mix from Stouffer’s. I adjusted my favorite keto cornbread recipe and turned it into a delicious dressing!
There are just 3 grams net carbs in each serving. The secret to getting it to taste like cornbread is the sweet corn extract. It tastes like corn without the carbs!
Keto Stuffing
I probably should have called this dressing instead of stuffing. What’s the difference between stuffing and dressing? Well, it depends on whether you are stuffing the mixture into the turkey or not.
They are both made with the same basic ingredients. But stuffing is cooked while the turkey cooks. Dressing is baked separately.
Today, most people use the terms interchangeably. If stuffing is a regular part of your holiday dinner, then make this recipe! It will light up your tastebuds – especially when you add plenty of ground sage and poultry seasoning! It will taste like it was cooked in the turkey!
Almond Flour Cornbread
There are different ways to make a low-carb dressing. My other recipe for keto cornbread dressing is really popular, too!
What sets this one apart is that I used lots of crumbled bacon in it. And in this recipe, I made my cornbread myself – in the other recipe I used a boxed keto cornbread mix.
I also have a recipe for skillet keto cornbread with a combination of both almond and coconut flour. It’s sweetened with monk fruit sweetener, so it’s slightly sweet with the perfect crumb texture.
It’s tasty on its own. I don’t recommend trying to crumble it into a dressing or stuffing side dish.
Keto Side Dishes
This keto cornbread stuffing with bacon is the perfect holiday dinner side dish. Serve it with a bunch of vegetable sides and you’ll have a feast that’s good for you (and tastes incredible too).
Even though most people argue about whether to add a salad to the table or not, you can’t deny the combination of flavors in easy keto broccoli salad. Plus, it has very few carbs.
For something with more carbs and on-theme ingredients, make keto cauliflower cranberry walnut salad. If you want to branch out to something a bit different, serve both keto cheesy cauliflower breadsticks with keto loaded ranch roasted cauliflower.
How To Store Stuffing
I suggest making and serving this on the same day. You can make it ahead if you only store it in the refrigerator for up to a day early.
Store the cornbread in the refrigerator in an airtight food storage container. It’s safe to eat it within three days, but it will taste best if you eat it sooner.
You can also freeze the cooked stuffing, too. Wrap it tightly in plastic wrap and store it in a freezer-safe storage bag. Remove as much air as possible to prevent freezer burn. Then, eat it within six months.

Ingredients
For the cornbread:
- Almond flour
- Large eggs
- Melted butter
- Sweet corn extract
- Baking powder
- Salt to taste
For the stuffing:
- Prepared cornbread above
- Butter
- Onion chopped
- Celery chopped
- Minced garlic
- Chicken broth
- Ground sage
- Poultry seasoning to taste
- Salt and pepper
- Bacon cooked and crumbled
Directions
Preheat the oven to 350 degrees.
Add the cornbread ingredients to a large mixing bowl, and blend until smooth.
Spread the mixture into a well greased cake pan, and bake for 20-25 minutes, or until cooked through. Let the cornbread cool.
Melt the butter in a skillet over medium heat.
Stir the onion and celery into the skillet, and saute until softened.
Mix in the garlic, and saute another 30 seconds.
Crumble the cornbread mixture into a large mixing bowl. Add in the cooked vegetables, sage, poultry seasoning, chicken broth and salt and
pepper to taste.
Fold in the bacon.
Spread the mixture into a well greased casserole dish. Raise the oven temperature to 400 degrees. Bake for 20 minutes.

- 6 slices Bacon crumbled
Instructions
