When you want a really juicy, tender cut of steak, grab a ribeye. It’s going to be priced higher than other steaks, but it’s worth every penny. This cut comes from the rib section, so it has the perfect texture.
It’s usually about 1-2 inches thick and you can buy either bone-in or boneless ribeye. Either choice is perfect for this recipe.
And honestly, you can make this recipe with other cuts of steak, too. Try it with sirloin steak or porterhouse. Just remember that flank steak is one of the toughest types of steak and will require some tenderizing first..

How can you tell when a steak is safe to eat and done cooking? The best way to tell when a steak is done is by using an internal food thermometer.
Follow these temps when you make garlic herb ribeye.
- 130°F for medium-rare
- 135°F medium
- 145°F medium well
- 150°F for well done
The internal temperature will keep rising even after you remove the steak from the grill or skillet, so I like to remove it when it is a few degrees under my preferred done-ness.
Skillet Steak Recipe
You can make this steak on your grill, on an indoor grill (like a George Foreman grill), or use a skillet. I chose to make this steak in my skillet and it turned out juicy on the inside and crispy on the outside.
Ribeye is already a very tender cut, but if you want to tenderize it a bit more, use these methods:
- Use a mallet. This means you literally hit it with a mallet to break up the fibers in the meat. This helps it cook in a way that makes it a lot more tender.
- Salt the meat. Salt actually draws out moisture and creates a natural brine.
- Let it come to room temperature before you cook it. Let your steak sit on the counter for 30 minutes before you cook it. This will help it cook more evenly, which will keep it tender.
What To Eat With Steak
Steak is usually served with steamed veggies and potatoes. You can stills serve it with your favorite steamed veggies, but you’ll have to replace the potatoes with something that is low-carb.
I like to serve steak with a side salad like copycat Olive Garden salad and some mushroom cauliflower rice. This steak will also taste amazing with some garlic knots and some cauliflower mash on the side.
Garlic butter zucchini and squash is another effortless side dish. It’s high in fiber and really low-carb. Instead of rolls, serve some rosemary cloud bread.

Instructions:
Season the ribeye steaks liberally on both sides with salt and pepper to taste. Heat the oil in a cast iron skillet over high heat.
Once the oil is heated, add the steaks, and sear them for 2-3 minutes on each side until they get a nice sear on them.
Reduce the heat to medium, and place the butter into the skillet.
When the butter has melted, add the garlic and herbs to the skillet.
Spoon the butter up over the steaks, and brush them with the herbs.
Continue to cook the steaks until done to your liking. Remove them just a bit before they get to your desired temperature, as they will continue to cook a bit when you allow them to rest.
Remove the steaks from the skillet, and allow them to rest for 5-10 minutes before serving.
