I revamped by keto sausage and cheese egg bites recipe and this is even better! This time, I added some cottage cheese, used bacon instead of sausage, and mixed in some chopped jalapenos.
The result is a spongier egg muffin that fills your mouth with hot and savory flavors.
These are the perfect things to make ahead for breakfast. Make a few batches, keep them in the fridge, and they’re ready for breakfast.
All you have to do pop them in the microwave for a few seconds and then breakfast is ready!
Jalapeno Popper Egg Bites
There are a few kitchen tools and gadgets that I suggest you grab before you begin. They aren’t required, but they will speed up the recipe and make it easier on you.
First, you should use silicone muffin cups. This will make it so much easier to remove the egg bites after they’re finished baking.
I noticed that they tend to stick to the muffin pan without the muffin cups (no matter how much I try to grease the muffin pan).
You’ll also need a food processor. The food processor makes the batter nice and smooth.
It’s so smooth that you won’t notice the cottage cheese.
What can you use instead of a food processor? A blender is a perfect substitute.
If you don’t have a blender, then try to mix it all together with an electric mixer.
Spicy Egg Bites
Even though I used fresh jalapenos in the egg bites, some people might think they still taste a bit mild. If you prefer food with a lot of heat, then either add some red pepper flakes or some chopped poblano peppers.
That will kick it up into another flavor gear.
Another way to change how they taste is to sprinkle some of your favorite cheese on top. Give the egg bites a nuttier flavor with some parmesan cheese or add some habanero cheese for more heat and spice!
Spicy Breakfast Recipe
Serve the jalapeno popper egg bites with more of your favorite keto-friendly breakfast recipes. They will taste perfect with a cauliflower rice breakfast bowl or whip up a keto-friendly smoothie to drink on the go.
You can also set them out and serve them for brunch, too. Serve them with some keto strawberry cream cheese roll-ups and a keto pumpkin chai tea latte to drink. Everyone will love it!
How To Store Egg Bites
This entire recipe makes about 12 egg muffins or bites. This is the perfect amount to make ahead for your breakfast or lunch for the upcoming week.
The best way to store leftover egg bites is to keep them in an airtight food storage container or a resealable sandwich bag. Keep them in the refrigerator and eat them within a week.
For long-term storage, freeze them. Wrap each egg bite in plastic wrap and then place them in a freezer-safe food storage bag.
Keep them in the freezer for up to six months.

Ingredients
- Eggs
- Cottage cheese
- Shredded cheddar cheese
- Bacon – cooked & crumbled
- Jalapeno – chopped
- Onion powder
Instructions
Preheat your oven to 350 degrees F., spray your muffin tin with non-stick cooking spray. I sprayed each of my silicone muffin liners, for easier removal.
In a food processor or blender, add the eggs, cottage cheese, shredded cheddar cheese, onion powder, salt & pepper. Blend until you have a smooth consistency.
Divide the egg mixture evenly in 12 muffin tins I had a little bit left over, that I simply scrambled in a skillet).
Top each muffin with chopped jalapenos and bacon.
Bake for approximately 25 minutes. Remove and let cool slightly before removing from the muffin tin.
