Save time and money and instead of trying to buy keto-friendly ice cream from the store, make it at home. No, you don’t need an ice cream maker.
All you need is an electric mixer and a mixing bowl. Using a stand mixer will save you time, but it’s not required.
Then, you just pop it into the freezer and let it set. That’s it!
I froze my ice cream in a parchment paper-lined loaf pan. But you can store it in any kind of freezer-safe container that you want to use.
I suggest making sure that it’s easy to scoop from before you use it.
Pumpkin Ice Cream
There are just six simple ingredients in this ice cream recipe. The two main ingredients are heavy whipping cream and pumpkin puree.
I then added some almond milk to make it not quite as thick. Remember to use unsweetened, plain almond milk.
If you use vanilla almond milk, don’t add extra vanilla to the ice cream.
Can you use coconut milk instead of almond milk? Yes, you sure can!
Use unsweetened coconut milk to keep it low-carb. And add your favorite ingredients as mix-ins, too.
You can mix in some sugar-free white or chocolate chips or add unsweetened coconut flakes. For more protein and health fats, sprinkle chopped nuts on top and to recreate the pumpkin pie flavor, top the ice cream with some sugar-free whipped cream.

There are so many different ways to make keto-friendly ice cream. I’ve made low-carb cottage cheese ice cream before and it turned out deliciously creamy.
If you prefer fruity flavors, then you will probably enjoy keto strawberry ice cream. Yes, it’s made with real strawberries!
You can also make a rich keto chocolate ice cream or a refreshingly tasty keto mint chocolate chip ice cream. And this pumpkin ice cream fits in with them.
Serve it on top of a chaffle, in a bowl, or on top of your favorite flavor of keto-friendly pie.
What To Eat With Ice Cream
