There are a ton of recipes for harvest chicken out there – and they are all incredibly different. Some of them include ingredients that are seasonal in the fall – like apples and sweet potatoes.
Others are made with Brussels sprouts and bacon. One things for sure, all of them are made with whole ingredients, fresh herbs, and tender chicken thighs.
My harvest chicken recipe is a low-carb delight! With just 4 grams net carbs in each serving, you can enjoy your favorite veggies and herbs.
Earthy brussels sprouts, meaty mushrooms, sweet rosemary, bold garlic, and salty pecans combine to give the chicken the most well-rounded flavors you’ve ever made.
Harvest Chicken Skillet
Kids and adults love harvest chicken, even if they might not be a fan of vegetables. When you cook them together in a skillet with fresh herbs, everything comes together in a perfect way. Honestly, it’s the bacon! Bacon makes everything taste better.
Trust me, use chicken thighs. The dark meat will cook better and be juicer than chicken breasts. As chicken breasts fry in the skillet, they have the tendency to dry out. If you want to use chicken breasts, I suggest marinating them first.
Pecan Crusted Chicken
Pecan goes perfectly with chicken. It’s full of healthy fats and even a good source of protein. You’ll really enjoy how the crushed nuts taste with the tender chicken thighs.
Be careful with how many pecans you use since they are higher in carbs. I only used about 1/3 a cup in the entire recipe, so the carbs stay in check.
It’s totally fine if you leave the pecans out entirely. I think they add a delightful crunch and flavor to the chicken but, if you leave them out, it won’t change the taste so much that you’ll miss them.
What To Eat With Chicken
Harvest chicken is a complete meal in one dish. It has both chicken and veggies, so you don’t have to add many sides to the table. Even so, I suggest starting out with a salad.

For something cold, add some easy keto broccoli salad to the table. Some keto dinner rolls and fluffy cauliflower mash will also taste perfect with all the veggies in the harvest chicken dinner.
In fact, I like to serve it on top of cauliflower mash, like you would for mashed potatoes. Other sides to add to the table include garlic knots, or keto breadsticks.
How To Store Cooked Chicken
This is the perfect thing to add to your weekly meal prep. Store the cooked harvest chicken an airtight food storage container. Keep it in the refrigerator for up to three days.
It’s best to reheat it on the stove, but you can use the microwave. Just remember to cover it because it will splatter in the microwave.

Directions
Add the olive oil to a large skillet over medium high heat. Season the chicken with salt and pepper to taste, and place skin side down into the
skillet. Sear for 5 minutes on each side. Remove the chicken and set aside.
Place the onions, brussels sprouts and mushrooms into the skillet, and saute for 3-5 minutes. Mix in the garlic, rosemary and chicken broth.
Return the chicken to the skillet, cover and simmer for 15-20 minutes until the vegetables are tender and the chicken is cooked through.
Garnish with bacon and toasted pecans before serving.

- 4 Bone-In Skin-On Chicken Thighs
- 2 tbsp Olive Oil
- 1/2 Onion chopped
- 1/4 pound Brussels Sprouts trimmed and halved
- 6 ounces Sliced Mushrooms
- 1/2 cup Chicken Broth
- 2 tsp Fresh Chopped Rosemary
- 2 tsp Minced Garlic
- 1/3 cup Bacon Pieces
- 1/3 cup Chopped Toasted Pecans
Instructions
