What Are Thai Noodles
Thai food is unique because it blends sweet, spicy, umami and salty flavors into a complex recipe. I have to admit, it’s one of my favorite things!
In fact, when I went on the keto diet, I missed pad Thai a lot. Thankfully, there is a really easy to make low-carb pad Thai that tastes just like the takeout version!
This recipe is completely vegetarian. I didn’t add any animal protein to it. You can choose to enjoy this as a side dish, or add some chicken or pork to it to make it a complete meal.
Sweet and Spicy Noodles
The sauce has a really unique combination of sweet, spicy, and salty flavors. I used sugar-free honey to get that same sticky-sweet flavor without the carbs or calories.
For the heat, I used some cayenne pepper. Use as much cayenne as you want.
And don’t skimp on the peanut butter, either! You can use either smooth or crunchy peanut butter. Since I garnished the noodles with extra peanuts, the peanuts in the peanut butter don’t stand out too much.
Keto Pad Thai Noodles
This is the perfect recipe to add to your meal prep! As it sits in the refrigerator, the flavors infuse into the palmini noodles.
Store leftover pad Thai in the fridge in an airtight container. It will stay fresh for up to three days.
This is also a freezer-friendly recipe. It will stay fresh in the freezer for up to six months.
What To Eat With Pad Thai
Keto pad Thai can be a complete meal by itself. You just have to add some cooked chicken or pork! If you want more food as side dishes, make cauliflower fried rice and low-carb Asian slaw on the side. Together, it will all taste like takeout but a lot fewer carbs!
Add a side of keto bok choy stir fry with soy sauce eggs. This has the same umami flavors with bright green bok choy.
And you can never go wrong with a bowl of keto egg drop soup – it’s a staple whenever I make Asian food for dinner. Instead of a salad, I’ll serve some low-carb tuna sushi in a bowl.
This is the perfect side dish to serve with keto Asian chicken with mushrooms or a low-carb sweet and sour pork skillet.
Keto Spicy Pasta
I didn’t make this very spicy since I have kids that prefer mild recipes, but there is a lot of room for creativity. If you like things spicy, add some diced jalapenos to the pasta and top it with some Sriracha.
You can also use a little less sugar-free honey. This will make the spicy flavors stand out more.
Keto Sweet and Spicy Pad Thai Noodles

Ingredients
Palmini linguini rinsed and drained well
Olive oil
Zucchini cubed
Sliced mushrooms
Eggs
Green onions + additional for garnish
Chopped peanuts for garnish
For the sauce:
Soy sauce
Rice vinegar
Sesame oil
Natural peanut butter
Sugar free honey
Cayenne pepper to taste (we used ¼ tsp.)
Heat the olive oil in a skillet over medium heat. Stir in the zucchini, mushrooms and palmini noodles. Saute until the vegetables are beginning to soften. Mix in the minced garlic, and saute for 30 seconds more.
Add all of the sauce ingredients into a bowl, and whisk until smooth.
Push the ingredients in the skillet off to one side, and crack the eggs into the empty space. Scramble them up with your cooking spoon until they are well cooked. Mix all of the ingredients back together.
Stir the green onions into the skillet.
Pour the sauce into the skillet, and saute for 5 more minutes.

- 1 Medium Zucchini Cubed
- 4 ounces Sliced Mushrooms
- 2 large Eggs
- 1/4 cup Green Onions Plus additional for garnish
- 2 tsp Minced Garlic
- 2 tbsp Chopped Peanuts for garnish
Keto Pad Thai Sauce
- 3 tbsp Soy Sauce
- 2 tsp Rice Vinegar
- 1/2 tsp Sesame Oil
- 2 tbsp Natural Peanut Butter
- 2 tbsp Sugar-Free Honey
- Cayenne Pepper to taste
Instructions
