There are a few ingredients that I always rely on when I want to make my recipes stand out – and that’s either cheese or bacon. This time, I opted for a rich, cheesy sauce.
And I kept the holidays in mind with it, too. The bright green spinach and red sugar-free dried cranberries work perfectly together.
The colors make you think of the holidays, instantly.
But what does this low-carb white cheddar kielbasa skillet taste like? I supported the natural flavor of the Kielbasa because I wanted it to stand out the most.
So I cooked it in a creamy sauce made with heavy whipping cream and shredded white cheddar cheese. Then, I added some onion, garlic, and Italian seasoning for a little extra flavor.
It all works so well together!

There are quite a few different ways to change things up with this recipe. First, if you want to bring the carb count lower, leave the dried cranberries out
They are the biggest source of carbs in this recipe. And it will still taste good without them.
Next, if you want to give it some kick, add some red pepper flakes and a bit of spicy cheese. I love jalapeno cheese and pepper jack cheese.

Like I said earlier, this recipe is pretty high in carbs already, so be careful if you want to start adding more veggies to the skillet.
If you don’t care about how many carbs it has, then you could add some chopped bell peppers, sliced zucchini, and a few broccoli florets. In fact, you can add any of your favorite veggies to this recipe and it will taste delicious.
Add this easy skillet dinner to your weekly meal prep. It stores really well.
Keep leftovers in an airtight container and keep it in the refrigerator. It will stay fresh for up to three days.
You can freeze it, too! Keep it in the freezer for up to six months.

One of the best things about skillet meals is that you can throw it together without much effort or overthinking. There is a certain order that makes it turn out really good, but it’s so easy.
Just brown the sausage first and then saute the onions with the butter. Then, make the sauce, add the spinach and cranberries, and add the cheese last.
Add in the sausage, heat it up, and it’s ready to serve! You want to add the cheese last so that it melts without overcooking.
If you add it too early, it could easily overcook and the texture might change. It might sound like a lot of steps, but after you make it once, you’ll have this recipe memorized.

- Natural kielbasa sliced
- Olive oil
- Butter
- Onion chopped
- Minced garlic
- Italian seasoning

Instructions:
Heat the olive oil in a skillet over medium high heat. Add in the kielbasa, and saute until crispy and browned. Remove and set aside. Drain any excess oil from the pan.
Stir in the butter and onions, and saute until tender
Mix in the garlic and Italian seasoning, and saute for 30 seconds. Pour in the heavy whipping cream, and season with salt to taste.
Add the cranberries and spinach to the skillet, and saute until the spinach is wilted and the sauce has thickened.
Stir in the white cheddar cheese, and stir until completely melted.
Return the kielbasa to the skillet, and stir to combine before serving.
