Cottage Cheese Biscuits
Yes, you read that correctly! I used cottage cheese to make low-carb biscuits.

They turn out so deliciously moist and flaky that you’ll create new ways to eat them. Enjoy them with butter, a bit of low-carb jam, or use them with meat and cheese for a sandwich.
One of the best things about these easy biscuits is that there are only 3 grams net carbs in each serving. That opens up so many possibilities for serving and eating them!

Low-Carb Biscuits
I’ve made other biscuit recipes before. For awhile, my favorite ones were my keto crack biscuits (I still love the bacon in them!). But I also really love my keto garlic cheddar drop biscuits.

They remind me of the rolls from Red Lobster. And if you’re looking for the perfect biscuits to make with keto biscuits and gravy, you just found them!
These low-carb biscuits are easy to slice and have that rich and savory flavor that tastes perfect with a creamy, zesty sausage gravy on top.
Herbed Cottage Cheese Biscuits
Since I made them with lots of garlic and herbs, they taste delicious with all of your favorite recipes. Make a keto breakfast sandwich with them.

Or serve them at dinner with you Keto Chicken Nugget Parmesan Casserole. They will also taste delicious with a bowl of Low-Carb Creamy Italian Zucchini Soup.
Here’s one of my best tips for making the low-carb cottage cheese biscuits. If you’re having trouble working with the batter, get your hands a little wet first.
It’s a very sticky batter, but a bit of water will help. And I used a cast iron skillet, but you can make them on a baking pan.
Biscuits With Herbs
What are your favorite kind of herbs to use on dinner rolls or biscuits? Since I baked the rolls with garlic powder, I suggest using parsley and chives.

And they don’t just look good with fresh herbs on top. They also smell and taste delicious with them, too!
If you’re worried about the texture of cottage cheese, don’t be. As the biscuits bake, the curds will melt and mix with the rest of the ingredients.
You can’t tell that I used cottage cheese in the recipe at all!
Keto Skillet Biscuits
These low-carb cottage cheese biscuits are the perfect make-ahead side dish to add to your weekly meal prep. The best way to store your low-carb biscuits is by wrapping them loosely in a towel and leaving them in a bowl on your countertop.

They will last a few days this way. You can also store them in an airtight container in the refrigerator – they will last up to a week this way.
You can also refrigerate the biscuits, too. If you do, they will last about a week.
Freezing them will keep them fresh for up to six months. Remember to seal them in an airtight container if you’re going to refrigerate or freeze them.
Low-Carb Herbed Cottage Cheese Biscuits Recipe

Ingredients:
- Almond flour
- Shredded cheddar cheese
- Cottage cheese
- Pinch salt
- Baking powder
- Garlic powder
- Large eggs
- Chopped parsley
- Chopped chives
Instructions:
Preheat the oven to 350 degrees.
Add all of the ingredients to a mixing bowl, and blend until well combined. 
Grease a small baking pan or cast iron skillet well. Wet your hands slightly, and form the mixture into 8 evenly sized balls. 
Place the balls of dough into the skillet or baking pan, and bake for 20-25 minutes, or until browned on top and cooked through.
