What Is Burrata
If you haven’t started to cook with burrata, you’re missing out. It’s basically pure happiness in cheese form.

It’s as smooth as mozzarella while also being even creamier and richer. Inside, it’s filled with a slightly tangy mixture of soft, stringy cheese curds and fresh cream.
Seriously, you HAVE to try it if you haven’t already. It’s one of those things that once you taste it, you’ll be dreaming about it.
Once you make this recipe, you’ll never go back to mozzarella again! You can serve burrata on a charcuterie board plain, with just some olive oil and flaked sea salt on top.
It’s so much fun to spread on crispy veggie slices! Or add it on top of your caprese chopped salad.
It ties all the ingredients together in the best way. And after you pair it with my marinated tomatoes, your eyes will pop and you’ll probably realize that you just made your favorite keto-friendly lunch.
Are Tomatoes Keto
Yes, tomatoes can totally be keto-friendly in moderation. I’ve used them in so many different recipes – you just have to track your macros and control how many you eat at a time (which is tough when you make marinated tomatoes!).

They add great flavor and nutrients (like Vitamin C and potassium!), so it’s a win-win as long as you’re keeping an eye on your overall carb count for the day.
Are you still wondering about how many carbs are in tomatoes? Here’s a quick run-down:
- Cherry tomatoes: Pretty low, around 0.3-0.7 grams of carbs per tomato. You can definitely snack on a few of these!
- Grape tomatoes: Similar to cherry tomatoes, a good option.
- Medium-sized tomato: This is where you need to be a little more mindful. A medium tomato can have around 3-5 grams of carbs.
- Canned tomatoes and tomato sauces: These can sometimes have added sugars, so you’ve gotta be a label detective! Look for no-sugar-added options.
- Sun-dried tomatoes: These are more concentrated, so they’ll have more carbs per serving than fresh ones.
Marinated Tomatoes
Unlike marinating chicken or steak, you don’t have to let the tomatoes sit in the marinade before you serve them. In fact, you can just toss the cherry tomatoes in the marinade and serve them immediately.

These marinated tomatoes are smothered in a sauce that reminds me of a herby caprese dressing. The dressing or marinade is created with a combination of olive oil, balsamic vinegar, sugar-free honey, minced garlic, thyme, and basil.
If you can, please top everything with fresh basil! Not only does it contrast beautifully with the red tomatoes, but it adds incredible aroma, too.
Keto Burrata
I already told you how much I love burrata because of the texture and flavor. But did you know it’s also a wonderful source of healthy fat and protein, too?

In 100 grams of burrata, there are 25 grams of fat and 18 grams of protein. I like to serve marinated tomatoes and burrata at parties, because everyone loves it and I can munch along with them, without compromising my keto diet.
This is also a tasty lunch recipe, too. With all that protein in it, you don’t have to add any meat!

- Pint cherry tomatoes halved
- Burrata
- Olive oil
- Balsamic vinegar
- Sugar free honey
- Minced garlic
- Thyme
- Basil
- Fresh chopped basil
- Salt and pepper to taste
Instructions:

Whisk together the olive oil, balsamic vinegar, honey, garlic, thyme, basil and salt and pepper to taste in a mixing bowl.

Stir in the cherry tomatoes, and toss to coat well.

Place the burrata in the center of a serving plate, and encircle with the cherry tomatoes. Pour the remaining marinade over the burrata and serve.
