Keto Cucumber Salad
This fresh salad has a concoction of different flavors and textures that will make you smile! From the tender chicken to the crispy cucumbers and crunchy onion – all covered in a creamy dressing – this is the ultimate way to prepare and eat garden-fresh cucumbers.

And if you have a bunch of cucumbers to use up, this is the best way to do it. I always keep my recipes simple and easy to customize – and that’s exactly what I did here, too.

Greek Chicken Cucumber Salad
What makes this Greek? There are three ingredients in this salad that made me want to call this a Greek salad.

First, I used Roma tomatoes, and tomatoes are commonly found in a lot of Greek recipes. I also added red onion (which is also found in a lot of Greek recipes).
But it’s the Greek yogurt that really makes this a Mediterranean-inspired salad. It has a rich flavor and thick texture that you’ll love.
There are 4 grams net carbs in each serving. So, if you want to add more Greek ingredients to the salad, you’ll have to recalculate the macros but I’d recommend adding some green bell pepper, olives, and feta cheese.
You could also flavor it with some lemon for a burst of freshness that will bring out the natural sweetness in the dill.
Cucumber Chicken Salad
I prepared the cucumbers two different ways. First, I sliced a small English cucumber into very thin slices.

Next, I shredded another cucumber. To keep the flavors the same, use the same type of cucumber for both methods.
I think English cucumbers have the best flavor and if you want to use a garden cucumber, use a smaller one – it’s often sweeter.
There are a lot of different ways to swap out ingredients, too. Instead of canned chicken, shred of any leftover cooked chicken that you have.
Or, use canned tuna instead. Instead of a red onion, use white onion – it’s milder. If you don’t like cottage cheese, no worries.
You can use ricotta cheese as a 1:1 swap.
Keto Greek Dressing
I’m a big fan of creamy dressings. I used it in my Keto Jalapeno Popper Shrimp Salad recipe and in my Keto Shrimp Egg Salad recipe too.

But if you don’t like creamy dressings (or maybe you need a dairy-free dressing) then there’s an easy solution. Instead of making my salad dressing, buy a sugar-free Greek dressing.
You can make some at home, too. It’s basically just red wine vinegar, Dijon mustard, avocado oil, salt, and garlic!
But I love this dressing so much that I’ll often make a double batch and keep it in the refrigerator. You can use it as a dip for fresh veggies. Or drizzle it on top of chopped lettuce and your favorite protein for a quick salad.
What To Eat With Salad
This salad has all your veggies, protein, and healthy fats in one dish. It’s a light but filling lunch.

Ingredients:
- Shredded or canned chicken
- Small English cucumber thinly sliced
- Roma tomato chopped
- Large red onion finely chopped
- Plain Greek yogurt
- Whipped cottage cheese
- Shredded cucumber well drained of excess water
- Minced garlic
- Dried dill
- Salt to taste
Instructions:
Add the chicken, sliced cucumber, tomato and red onion to a mixing bowl.

Combine the Greek yogurt, cottage cheese, garlic, dill, shredded cucumber and salt in a food processor, and pulse until smooth.

Pour the tzatziki sauce into the mixing bowl with the other ingredients. Stir to combine well.

Serve immediately with your choice of keto friendly wraps, bread, etc.
