The bread for this hearty and healthy sandwich is more like a crispy cheese wrap sliced into squares than actual bread. It’s gluten-free and flourless bread because there are literally just two ingredients – shredded cheddar cheese and sliced dill pickles.

Yes, that’s all you need! Oh, and I suggest using parchment paper or a silicone baking mat.
The cheese will stick to whatever baking tray you use. But when you bake cheese, it becomes really crispy and solid enough to use as a wrap or as keto “bread.”
What’s the pickle in it for? You can leave it out if you don’t like the flavor, but it adds a bright zestiness that makes the entire sandwich tastier!

I’ve made a lot of low-carb sandwiches before, and this will go down as one of my all-time favorites. I love all the fresh ingredients in it – the sliced ham and turkey, crispy lettuce, and juicy tomato.

Use your favorite types of deli meat. Try it with thin-sliced roast beef or spicy roasted turkey and if you have some garden tomatoes, slice them and use them!
Instead of Romaine lettuce, you can use your favorite type of greens (like spinach or kale).

I’ve made keto bread before and even made sandwiches with store-bought keto bread. But if you want to avoid flour for any reason, this cheese bread recipe is a great choice.

It’s also fantastic for anyone that loves crunchy food. If you order thin-crust pizza and like crispy chips, then this recipe will make you very happy.
There are other ways to make sandwiches without bread, too. I used the baked cheese idea to make keto club sandwich roll-ups before.
You can also make a low-carb Reuben sandwich with chaffles instead of bread. Or use large pieces of lettuce as bread – it works surprisingly well!
Keto Lunch Idea
There are 4 grams net carbs in each sandwich. That leaves you plenty of macros to add sides or drinks to your lunch, if you want.

For something sweet, make a low-carb strawberry pretzel parfait. Or for something fun, make keto sausage and chorizo dip and use some bell peppers as the dippers.
These sandwiches will also taste delicious with some keto Mexican pinwheels! And then serve it with a glass of keto sweet tea and you have the perfect lunch.

Ingredients:
- Shredded cheddar cheese
- Thin Sandwich sliced dill pickles
- Deli sliced ham
- Deli sliced turkey
- Roma tomato sliced thinly
- Romaine lettuce
Instructions:

Line a baking sheet with parchment paper, and then spread a layer of cheddar cheese over the baking sheet. Layer the pickle slices over the cheese.

Bake at 425 degrees until the edges are browned and crispy. Remove from the oven, and allow the cheese to cool and crisp up.

Cut the pickle cheese mixture into “bread” slices.

Top a slice of pickle cheese bread with some of the ham slices, turkey slices, tomato and romaine lettuce.

Place another pickle cheese bread slice on top and serve.
