One of the heartiest and best recipes you can make in the fall is this keto cornbread and chili skillet. It’s comfort food at its best!

Is Cornbread Keto
No, typical cornbread is not ket0-friendly. It’s made with corn, which has way too many carbs in it to be eaten on a low-carb diet.

In fact, in one ounce of cornbread, there are 15 grams of carbs.
So, I created a recipe for a low-carb cornbread that is made without any corn at all. There are still 6 grams net carbs in each serving of this recipe. But that number can still fit in with a keto diet.
Keto Cornbread
How do you make cornbread without corn? Well, you have to use almond flour instead of cornmeal. My cornbread was a mixture of almond flour, butter, baking powder, and eggs.

Then, it was sweetened with confectioner’s sugar substitute. This powdery sweetener also gave the faux cornbread a fluffier texture.
Save this recipe! Because you can make the cornbread by itself. It is the perfect side dish for other southern recipes like keto cauliflower grits and low-carb seven layer salad.
Keto Chili
This chili recipe is slightly different from my easy keto chili recipe. That one also has no beans, but it includes celery and is spiced with smoky paprika.

Beans are problematic on the keto diet. Some types of beans are really high in carbs, so you’ve got to be careful with how many you eat.
Healthline has a fantastic list of beans, organized by how many carbs they have. Lentils have the least and they still have 11 grams net carbs in each serving.
Kidney beans are usually used in chili, and they have 13 grams net carbs in each 1/2-cup serving. That’s why I didn’t use any beans in my chili. It’s a meat chili. My chili is made with ground beef, onion, green bell pepper, green chilis, and diced tomatoes.
I also added some jalapeno for a bit of kick, but that’s optional.
What To Eat With Chili
This keto cornbread and chili skillet is an entire meal, so you don’t have to eat anything with it to get full or eat a nutritious meal.

How To Store Chili
You can add this to your weekly meal prep, but it won’t last as long as other types of food might. As it sits in the refrigerator, the cornbread will soak up the sauce from the chili and get pretty soft.

Store your keto chili and cornbread in an airtight container and keep it in the refrigerator for up to three days.

Ingredients

For the chili:
- Ground beef
- Onion chopped
- Green bell pepper chopped
- Tomato paste
- Chili powder
- Cumin
- Oregano
- Worcestershire sauce
- Canned green chilis
- Diced tomatoes
- Beef broth
- Jalapeno finely chopped
- Salt and pepper to taste
For the cornbread topping:
- Almond flour
- Baking powder
- Melted butter
- Swerve confectioners sugar substitute
- Large eggs
Directions

Preheat the oven to 350 degrees. Add the ground beef, onion, jalapeno and bell peppers to a large oven-proof skillet over medium high heat, and saute until the beef is browned and the vegetables have softened.
Drain the excess grease, and lower the temperature to medium.

Stir in the tomato paste, chili powder, cumin, oregano, Worcestershire sauce and salt and pepper to taste. Saute for 30 seconds longer.

Pour in the diced tomatoes, green chilis and broth. Simmer for 5 minutes.

Stir together the topping ingredients in a bowl until well combined, and then spoon it over the top of the chili in the skillet.

Bake for 15-20 minutes until the topping is browned and cooked through.

Garnish with some cheddar cheese and parsley before serving if desired.

- 3 large Eggs
Instructions
