Using keto pancakes as the buns, these breakfast smashburgers give you a high-protein meal you can eat for breakfast or dinner.
Keto Pancakes
What is a breakfast Smashburger? Well, it’s basically a healthier copycat version of a McGriddle but instead of sausage, egg, and cheese, I made it with a cheeseburger, egg, and bacon.
This is the perfect brunch recipe because it takes two popular recipes – the cheeseburger and pancakes – and combines it into one unforgettable meal.
This tasty recipe starts with keto pancakes. You can use your favorite keto-friendly pancake mix or one of my homemade pancake recipes.
My low-carb pumpkin pancakes might be a bit too sweet to go with the burger. Instead, I suggest making keto protein pancakes.
Breakfast Smashburgers
Have you ever made a Smashburger before? It’s the same thing as a beef burger, but you literally smash it down with a spatula or something heavy so that as it fries it becomes really thin.
Smashburgers tend to be crispier on the outside and a lot easier to eat since they aren’t as thick. The last time I made smashburgers, I made Keto Big Mac Smashburgers.
This time, I added some fried eggs and bacon on top and made breakfast burgers. And with keto pancakes as the buns, it’s a tasty way to take your food with you on the go!
Keto Breakfast Burger
This recipe was inspired by my first recipe for keto breakfast burgers. In that one, I used keto-friendly hamburger buns and made homemade cheeseburgers.
While I really enjoyed them, I was craving a bit of sweetness to offset the salty burger and eggs. That’s when I got the idea to use keto pancakes instead of a bun.
Can you make this burger with sausage patties instead of a burger patty? Yes, you sure can!
It will taste a bit saltier and a little greasier, so be prepared for that. But I found that sausage patties taste amazing with pancakes, so definitely give it a shot!
What To Eat With Burgers
Since this is a cross between breakfast and dinner, you can add any sides that you want with it.
No matter what, you can’t go wrong with some keto greek cucumber salad, Keto guacamole deviled eggs, or some Keto fried pickles with cheese. Then, serve it all with a cold glass of sugar-free sweet tea!
You could also make some bacon avocado fries, cauliflower rice, or radish salad on the side.
How To Store Pancakes
The best way to save yourself time is to make the pancakes and the burgers ahead of time. Store cooked pancakes in an airtight food storage container or bag and keep them in the refrigerator a use them within three days.
The cheeseburgers will stay fresh in the refrigerator for three days as well.
